Mix of carbohydrates obtained from the breakdown of tapioca starch.
They are different glucose (dextrose) chains that are able to retain oils and fats, in general, obtaining powdered products with a strong flavour from the fat they have retained.It is a gluten-free product and, therefore, suitable for celiacs.
Characteristics and uses:
- Mix the powdered product with oil or other fats, until fat has been absorbed.
- TIt can also be used as humectant, thickener and, even, as anti-crystalliser.
- Suggested ratio: 200g of Mälto/100g of oil or fat.
- Available in 1 Kg pack.
