Acid extracted from fruits and other plant matter or from the fermentation process. Also known as vitamin C, used as an antioxidant. Prevents darkening of fruits and vegetables when peeled. Can also be used on meats.

Usually diluted in water, applied to the surface of the product or added directly in this solution.
