Acid extracted from the juice of citrus fruits or from the fermentation process. Used in jams, marmalades, gels and fruit purées to optimise setting. Also used to limit the darkening of fruit and vegetables, regulate acidity, make invert sugar, etc.
Instructions for use:
Add to the product, either directly in solid form or diluted in water.
2-8 g/kg of product.
